You could probably compare the idea of human race to creating vague categories for natural variation in fur coat color/pattern within the same breed of dog. Dog breeds have less genetic diversity between them than cat breeds do. Dogs just have a lot of traits that small genetic changes lead to large phenotypic differences.
Its just easier to make dogs look different than most animals
